While Darjeeling may be considered the champagne of black teas, this unique oolong tea cake may just be the champagne of oolongs. This cake differs from a pu-erh cake in that it is not fermented and it is not as firmly compressed. Instead the leaves are finely interwoven, allowing the pieces to peel apart into ornately delicate layers with vibrant colors and a soft, crepe-like texture. This tea steeps a beautiful golden color and has fragrant floral undertones. With each steeping, the character of this tea redefines itself into something even more beautiful and complex, altogether retaining its superior dignity sip after sip.
