Rooibos, popularly referred to as "red tea", is a caffeine free, needle-like bush that stems from the Western Cape province of South Africa and is part of the legume family. Generally, the leaves are oxidized, giving way to its characteristic reddish brown color and nutty flavor. Unoxidized rooibos is known as "green rooibos" and differs from traditional rooibos in flavor, color and aroma.
