What is the difference between ceremonial matcha and Grade A matcha?

Ceremonial grade uses the youngest first harvest leaves and is made for whisking with water. Our Grade A matcha uses slightly more mature leaves and is the better choice for lattes, smoothies and baking, where milk and sweetener would hide the subtlety of ceremonial grade.

Does matcha contain caffeine?

Yes. Because you drink the whole leaf, a 1 to 2 gram serving of matcha contains roughly 38 to 70 mg of caffeine, usually less than a cup of coffee. We rate it medium caffeine.

How do I prepare ceremonial matcha?

Sift 1 to 2 grams (about one teaspoon) into a bowl, add 2 oz of 175°F water, and whisk briskly in a W motion with a bamboo whisk for 15 to 30 seconds until frothy. Add more water for a traditional cup, or milk for a latte. Do not use boiling water; it makes matcha bitter.

What does ceremonial matcha taste like?

Smooth, lightly sweet and vegetal, with a savory umami depth and a clean finish. It should not taste bitter. A bright green color is the quickest sign of freshness and grade.

Is this matcha shade grown?

Yes. Ceremonial matcha is grown under shade for several weeks before harvest, which is what gives it the vivid green color and sweeter, umami rich flavor.

Can I use ceremonial matcha iced or in a latte?

Yes. Whisk it with a small amount of water first, then pour over ice or add hot or cold milk. For everyday lattes many customers use our Grade A matcha and save the ceremonial grade for drinking straight.

How should I store matcha?

Sealed, cool and away from light. Unopened tins keep well in the refrigerator; let the tin come to room temperature before opening. Finish an opened tin within about four to eight weeks for the brightest color and flavor.
